Nature rarely produces blue color, and the blue color in Butterfly Pea Flower comes from the presence of anthocyanins with its vibrant pigment. The blue color then can change color depending on the pH of the liquid it is steeping in. In our probiotic concoction with low pH, it creates a striking purple color.
